Roadmeter has a Boat mode that shows your speed in knots with heading up front, the way a chartplotter reads. Speed is GPS speed over ground, it works offline far from cell coverage, and each outing can be saved with its route and exported as GPX.

Does Roadmeter show speed in knots?

Yes. Boat mode switches to knots unless you picked a unit by hand, and knots can be chosen in any mode.

Does it work offshore without signal?

Yes. GPS works without a cellular or internet connection.
